4 egg whites
1/2 cup granulated sugar
3 cups sweetened shredded coconut
1 teaspoon vanilla extract
Preheat oven to 350º F
Line 2 baking sheets with parchment paper
In a bowl, whisk the egg whites until frothy. Add the sugar and mix thoroughly. Then add the coconut and mix. Using a tablespoon, place mounds of the mixture onto the prepared baking sheets. Bake 15-20 minutes or until brown on top. Let cool before serving. You can sprinkle with powder sugar or dip into melted chocolate or Nutella for a different taste.
Options: add the zest of one orange or lemon to the mixture before baking for a different flavor.
NOTE: Kuma Mileva Cosic was my Godmother and she was an excellent cook as well. Baking was her specialty and she would often bake for the neighbors and sell her baked goods: breads, cakes, pies, and different cookies. Her kitchen had the nicest smells like a bakery and since she lived next door to us, we had that smell often when the windows were open. More happy memories.
